Merfolk’s Specialty Coffee, set to open on November 12, will bring a distinctive coffee and tea experience to Austin, focusing on specialty brewing techniques. Founder and owner Justin Monroe traces his passion for coffee back to his time at a Starbucks Reserve location in Seattle, a unique arm of Starbucks that emphasizes high-quality coffee and advanced brewing methods.
Monroe’s interest in perfecting coffee deepened while working at Dolce Neve Gelato on South First Street, where he also gained insight into managing a small business. This experience laid the groundwork for his venture, where customers can expect coffee crafted with precision using espresso machines, French presses, and siphon brewers.
Partnering with Dripping Springs-based Greater Goods Coffee Co., Merfolk’s will also feature unique brews from the local roaster. While Merfolk’s will serve quick classics like lattes, cappuccinos, and frappes, Monroe emphasizes that the spotlight will be on the art of specialty brewing.
