Redbrick Coffee Marks 13 Years with New Name and Evolving Menu

Canberra’s coffee scene is thriving, and much of that success can be attributed to homegrown business Redbrick. Founded by Tim and Myf Manning as a small café in Curtin, Redbrick has grown into a major wholesale presence with outlets across the city. As the company celebrates its 13th anniversary, it’s making exciting changes to keep evolving and offering the very best coffee to Canberrans.

One of the biggest changes is the renaming of ARC, now officially the flagship Redbrick location. “We’ve spent a long time building Redbrick as a brand, and it felt like the right time to put the Redbrick name to the place in the city,” Tim Manning explained. The change also coincides with a shift in the kitchen, as Chef Angela Koungoulos steps up to the role of Head Chef after working at ARC since its opening. This new leadership brings a fresh, playful twist to the menu, with dishes like fried chicken waffles and a double-smash burger joining classic brunch fare.

Redbrick is committed to strengthening its relationships with coffee growers worldwide. With established partnerships in Brazil, Colombia, Asia, and Africa, Tim and his team have visited farms to better understand the origins of their coffee. “We want to know who produces our coffee, where it comes from, and make those connections,” Tim said. These relationships are reflected in Redbrick’s Coffee Coffee blend, which features beans exclusively sourced from Brazil and Colombia, and their seasonally changing Good Day blend, which showcases different coffee regions and emerging farmers.

In addition to its commitment to quality, Redbrick is focused on sustainability, using fully home-compostable coffee bags and takeaway cups. They also offer home-brewing courses to help customers get the most out of their coffee machines, continuing their focus on innovation and education.
