A family and veteran-owned coffee trailer, Slow Morning Coffee, is becoming a popular weekend spot in Copperas Cove. Located at 115 E. Ave. E, the trailer serves a variety of handcrafted espresso-based drinks every weekend from 8 a.m. to 2 p.m.
Slow Morning Coffee, which opened in November, specializes in beverages like lattes, cappuccinos, macchiatos, energy drinks, matcha, and Americanos. The drinks are made with fresh ingredients and a unique blend of flavors such as coconut, caramel, vanilla, and floral notes.
Owner Edgar Gonzalez shared that the coffee trailer is more than just a business—it’s a way of giving back to the community. “We take our craft seriously, grinding every cup fresh to ensure the highest quality. Slow Morning Coffee is here to help Downtown Cove thrive, one cup at a time,” he said in an email.
Gonzalez also expressed excitement about the ongoing transformation of Copperas Cove’s downtown area. “It’s inspiring to see the community come together to grow this area. We’re proud to be part of this new, up-and-coming downtown community,” he wrote.
As the city continues to evolve, Slow Morning Coffee is becoming a cornerstone in the revitalization of the local area, bringing quality coffee and a sense of connection to residents and visitors alike.
