Chris Aubin is passionate about creating spaces where people can linger, not just rush through their coffee stop. “Back in the late ’90s and early 2000s, cafes were all about the experience of staying, not just grabbing a quick coffee,” says Aubin. “That culture still exists, but it’s becoming less common, especially in cities. Even though our space is small, we want it to be a place where people can relax and enjoy their time.”
In the summer of 2023, Chris and Amanda (Mandy) Aubin opened Seed Café & Espresso Bar in Pawtucket’s emerging downtown, inside the Still on Main mini-mall. The cozy espresso bar doubles as a plant shop, offering high-quality coffee, homemade sandwiches, and a calming atmosphere surrounded by lush greenery.
“We wanted to combine my love for coffee with Mandy’s passion for plants,” Aubin explains. “Pawtucket is a city full of history, and having lived here for 13 years, we wanted to create something in the place we love.”
Seed Café serves as more than just a place to grab coffee—it’s a relaxing spot to work remotely. Barstools near the espresso machine and cozy tables invite customers to settle in. The space is also an indoor oasis, with plants that enhance the atmosphere and are available for sale. “We wanted the plants to blend with the space. It’s small, but they bring life to the décor and change as new plants are introduced,” says Aubin.
The café exclusively serves Borealis coffee, offering a variety of blends from Africa, Guatemala, and Colombia. Popular drinks include the winter Cinna-Freak Latte, made with cinnamon bun syrup, maple, and toasted marshmallow syrup. Other favorites are the London Smog Latte, featuring Earl Grey and lavender syrups, and the Salty Sap Latte, a mix of maple syrup and sea salt. For non-coffee drinkers, Seed Café also offers a selection of teas like matcha and chai.
