Josh Brugger of Auburn and his business partner Tim Larson from Tacoma are dreaming big with their latest venture—a second walk-up coffee stand in Seattle.
The Shore House, which opened its doors on January 5 in Seattle’s Central District on Cherry Street, has quickly set itself apart from other coffee spots. Located next to Garfield and Nova high schools, the coffee shop offers a unique twist on the traditional coffee stand.
“We’re a bit different,” Brugger said.
The Shore House serves high-quality coffee from Lighthouse Roasters, but what truly makes it stand out is the addition of a variety of breakfast sandwiches, all freshly made to order. For those with a sweet tooth, customers can enjoy frozen chocolate bananas and shaved ice with 40 different syrup flavors, sprinkles, and whipped topping—available all day.
“The students and faculty have been great. We get teachers coming over,” Brugger shared. “Great customer interactions, and great food. We prepare 10 different breakfast sandwiches, and we don’t cook them until you order.”
Brugger and Larson, both experienced in the hotel and restaurant industries, first met years ago on a job. After becoming close friends, they decided to go into business together. They considered several ideas before settling on coffee.
“We looked at bars and nightclubs. I come from a hotel background, and Tim is more restaurant-focused,” Brugger explained. “When we found the space with the Winnebago, it just screamed coffee and shaved ice.”
