In a notable venture for food and beverage aficionados, Fairfield University has unveiled its own signature coffee and beer, developed through collaborations with local businesses run by its alumni.
The university introduced two distinctive products within just five days: the “Red Sea Blend” coffee, created in partnership with Silvermine Coffee Roasters of Norwalk, and a lager called “’42 Brew,” produced by Elicit Brewing Company, based in Fairfield. Both ventures highlight the university’s strong ties with its alumni, with backing from a sponsoring agency renowned for facilitating brand partnerships in professional sports leagues like the NFL, MLB, and NCAA basketball.
The ‘42 Brew lager, named to commemorate Fairfield University’s founding year, is brewed at Elicit Brewing Co.’s newly established location. Described as a crisp lager with a pilsner-like finish, the beer is infused with “citrus-forward hops” for a refreshing taste.
“’42 Brew is crafted for moments of relaxation and camaraderie, whether you’re enjoying the scenic views of Long Island Sound or celebrating with friends during the Red Sea events,” the university’s website boasts. “We raise a glass to the collaboration between Fairfield University and Elicit Brewing! Bottoms up and Stags Up!”
The brewery, led by brothers Steve and Peter Ciardiello, Fairfield graduates from the classes of 1980 and 1981 respectively, played a central role in bringing this collaboration to life. The university highlighted their connection as alumni when celebrating the launch.
“At Fairfield University, we are dedicated to fostering strong relationships with local businesses and our alumni,” said Jennifer Anderson, Vice President of Marketing and Communications at Fairfield University. “The launch of ’42 Brew in partnership with Elicit Brewing demonstrates this commitment and reflects the entrepreneurial spirit of our graduates.”
Reflecting on their time at the university, the Ciardiello brothers credited their education for the skills they’ve applied to their business ventures. “Time management was critical during my time at Fairfield, and I believe it has played a key role in my career development,” Peter Ciardiello noted.
Meanwhile, the “Red Sea Blend” coffee, named after the university’s spirited fan section, is set to be sold at Silvermine Coffee Roasters, The Pantry on Post Road, and at university events. Orders for 12-ounce bags of the coffee, featuring a blend of light, medium, and medium-plus roasts from Brazil, Costa Rica, and Guatemala, are now shipping through Silvermine’s website. The blend offers a balanced flavor profile with subtle hints of sweet tartness.
Silvermine Coffee Roasters is run by Thomas Morsanutto, a 2004 graduate of Fairfield College Preparatory School, which is located on the university’s campus. Morsanutto established the coffee business in 2015 and opened his Harbor Avenue shop last year.
“I’m excited to collaborate with Fairfield University and bring our coffee to the campus community,” Morsanutto said in a press release. “My time at Prep was filled with unforgettable memories, and I’m honored to share my passion for coffee with the next generation of students.”
